Celebrate World Vegetarian Day With A Delicious Lentil Salad
Monday, October 1, is World Vegetarian Day, bringing awareness to the ethical, environmental, health and humanitarian benefits of a vegetarian lifestyle.
Alongside Pouyoukas Foods, AGT Foods has launched a new range of whole food, vegetarian products into supermarket stores under the label Corona Foods. The extensive range includes lentils, soup mix, split peas, kidney beans, coconut, popcorn, samp and beans, sago and pearl barley. These are all great options to have on World Vegetarian Day as well as throughout the year.
Here is a delicious and easy vegetarian dish from Pouyoukas and Corona Foods.
3 cups cooked Pouyoukas or Corona lentils
Juice of 1 large lemon
3 tablespoons (45 ml) olive oil
4 radishes, thinly sliced
150 g sugar snap peas, sliced and shredded
1 small green chilli, deseeded and finely chopped (optional)
Sea salt and freshly ground black pepper, to taste
In a large bowl, combine the lentils, lemon juice, olive oil, radishes, sugar snap peas and chilli.
Season well with sea salt and freshly ground black pepper and mix well.
Spoon onto a serving platter and scatter with micro herbs before serving.
