Lo Mein Primavera
Not in the mood to slave away in the kitchen tonight?
This quick and easy meal should satisfy pasta lovers.
You will need:
* One package extra-firm tofu.
* One packet linguine.
* Two tablespoons vegetable oil.
* Two celery stalks.
* One medium red pepper.
* Three garlic cloves.
* One large zucchini.
* Two large carrots.
* Quarter cup lower-sodium soy sauce.
* Half a teaspoon sesame oil.
* Fresh cilantro leaves.
What to do:
Cut tofu block in half lengthwise. Cut each piece into thick slices. Place slices in single layer between paper towels to remove excess moisture.
In a non-stick pan, heat enough water to cook linguine. Drain and rinse under cold running water to prevent pasta from sticking.
In same pan, heat one tablespoon oil on medium one minute. Remove paper towel and add tofu in single layer and cook 10 minutes or until golden brown, turning once. Transfer to plate.
In same pan, heat remaining tablespoon oil on medium one minute. Add celery, pepper, and garlic; cook two minutes or until crisp-tender, stirring. Add zucchini; cook one to two minutes or until crisp-tender, stirring.
Add carrots, soy sauce, tofu, and noodles. Cook two minutes or until heated through, stirring to coat.
Remove from heat, stir in sesame oil, and transfer to serving plates. Garnish with cilantro.
